Combine 2 tablespoons olive oil and 2 tablespoons honey in a large bowl.
Add 2-3 peeled and sliced parsnips, and 2 sliced carrots.
Gently toss to coat.
Place vegetables in a single layer on a baking sheet.
Sprinkle with coarse salt and pepper.
Bake at 450 degrees for 15 minutes.
Turn vegetables and bake for an additional 5-7 minutes.
