Cut florets from 1 bunch broccoli.
Chop florets into bite size pieces.
Cut the stalk into 1/8 inch slices and place all in a mixing bowl.
Toss with 2 tablespoons olive oil, 2 cloves minced garlic and salt and pepper. Set aside.
Spread 1/3 cup panko bread crumbs in a 13 X 9 inch baking pan and place into a 425 degree oven for 2 minutes to lightly toast the bread crumbs.
Remove from oven and add bread crumbs to the broccoli mixture.
Toss and return to the baking dish.
Place in the oven and roast 8 – 10 additional minutes.
Remove from oven.
Toss in ¼ grated Parmesan if desired.
